When you are in character creation window (the part with sliders) you simply click paste (ctrl+v) and character will change to one you have chosen. The only thing you have to manually change is sex of the character. To change companion preset during the game you need another mod called "Detailed Character Creation" by PoPoWanObi.
Enter the keep and talk to them. If you have met the requirements as described, a new dialogue option will be available. Select the option that ends ‘It is time to proclaim a new Kingdom’, which is usually at the top of the dialogue list. This dialogue prompt will start the create a Kingdom process in Bannerlord.
